Abstract:AquantitativeexposureassessmentwasconductedtomodeltheriskofListeriamonocytogenes
foodborneilnessassociatedwiththeconsumptionofreadytoeatsaladsinacityofChina.The
quantitativedetectiondataofL.monocytogeneswereusedtoestimatetheinitialcontaminationleveland
mathematicalmodelsfromourpreviousstudywereusedtotestthegrowthkineticsofL.monocytogenesin
readytoeatsaladsunderdiferentconditionsfromretailtohome.The@RisksoftwarebasedonMonte
CarlowasappliedforsimulatingtheL.monocytogeneslevelinreadytoeatsaladsfromretailtohome.
Theresultsshowedthatapproximately080% ofreadytoeatsaladscontainedmorethan4L
monocytogenes,thushavingsomepotentialriskforconsumers.Thecontrolandthemonitoringof
L.monocytogenesinreadytoeatproductsshouldbestrengthenedtoreducethedietaryrisklevelofthe
generalpopulation.Sensitivityanalysisindicatedthatinitialcontaminationlevelwasthemainriskcontrol
factor,thusitcouldprovidesomeusefulinformationtoconsumersandstakeholders.
