Abstract:In order to determine the appropriate ozone concentration for red grape storage under the ice-temperature(-1℃),the grapes were treated with ozone concentration of 2.5 and 5mg·L-1, and the quality and physiological index of grapes were measured regularly during storage. The results showed, ozone had better antibacterial effect, compared to the control groups, ozone treatment reduced rotting rate and threshing rate, delayed decreasing of soluble solid content and titratable acidity,and the low ozone concentration (2.5mg·L-1) had better storage quality than high concentration (5mg·L-1).So under the ice-temperature, the proper ozone treatment concentration for red grape storage was 2.5mg·L-1.This research provided a reference for screening out the safe, effective, economical and practical method of non-sulfur storage method.
