Abstract:FlavonoidswereextractedfromEpimediumwithultrasonicassistance,usingethanolasextrac
tionsolvent.Theoptimalextractingconditionswereobtainedbasedonsinglefactortestandorthogonal
experimentaldesign.Thehydroxylradicalscavengingcapacitiesandantioxidativeactivitiesagainstthe
peroxidationofoilsandfatsoftheflavonoidextractswereobtainedcomparedwithreferenceantioxidants.
Resultsshowedthatundertheconditionsof70% ethanol,1∶30(g/mL)materialtoliquidratio,and30
minultrasonicextractingtime,thetotalflavonoidmassfractionofextractswas2.246%.Theextracts
showedgoodantioxidativeefectsonoilsandfats.
