Abstract:The effects of different sulfur rates on amino acid concentration and gluten content of wheat grain were investigated using two wheat varieties in sulfurdeficient field. The result showed that sulfur rate affected the accumulation of N and S in wheat plant, but hardly affected the gluten content of grains both wheat varieties. Amino acid analysis showed application of sulfur fertilizer increased the concentration of total amino acid and aspartic acid, threonine, serine, glutamic acid, glycine, leucine, phenylalanine and especially sulfurcontaining amino acid methionine of Beinong 10 wheat grain. The concentration of sulfurcontaining amino acid cysteine of wheat grain Jingdong 8 increased by 7%~28%.
