单株核酸、蛋白质和干物质总量在水稻生长发育中都经历着逐步增加,达到高峰,然后下降的变化过程。其中核酸积累最快,在穗分化始达高峰。而蛋白质和干物质稍慢,于抽穗时达峰值。核酸总量在水稻器官间的分配重点随生育过程而不断转换,依次为叶和鞘→根→茎→穗,但始终重点分配在当时生长最旺盛器官。而蛋白质总量的分配重点则减数分裂前一直在叶片,抽穗后转到穗。单位干重核酸含量在幼穗分化始期最高,开始发生分蘖的4叶期次之,而蛋白质含量则以4叶期为最高,以后随生育进程而逐渐下降。由此可见,核酸和器官发生及生长的关系比蛋白质更密切,它可作为生长状况的指标,并与蛋白质,淀粉和骨架构成物质(纤维素、半纤维素、木质素、果胶等)并列为水稻体四种重要大分子化合物之一。
