摘 要 ：应用随机抽样方法对陕西省岐山县进行土壤有机质含量、施肥量、灌水等环境因素调查和分析。结果表明：基础地力、肥水状况等许多因素均能影响冬小麦蛋白质含量，基础地力和肥料投入是同时获高产、优质的前提和保证。缺水旱地小麦可能获得较高的蛋白质含量但低产；灌水不但影响到小麦产量，同时还影响到小麦产量和蛋白质含量之间的相关系数。
