摘 要 ：甘薯块根类胡萝卜素的含量随品种不同有很大差异。高者达28.08毫克/100克鲜重,少者仅0.12毫克/100克鲜重。块根薯肉色与类胡萝卜素的含量呈正相关,r=0.82,达极显著水平。类胡萝卜素的组成成分也影响着块根的薯肉色。β-胡萝卜素是甘薯块根的主要色素,当其含量达总量60%以上,且类胡萝卜素的总量也高时,块根薯肉色橙红。用色差
