摘 要 ：本文研究了京香1号的挥发物质的构成,并阐明2—乙酰—1—吡咯啉是水稻中的一种重要的香味成分;开发质量检测的快速方法—顶空分析;对不同品种的该物质浓度作了比较;另外还做了 N、Zn 肥对香味效应的研究。
