摘 要 ：采用 SDS 聚丙烯酰胺凝胶电泳方法,分析了萌发过程中大豆种子蛋白组分的变化。结果表明:(1)萌发过程中大豆种子贮藏蛋白各种组分的降解时间不同,其中7S 的付大豆球蛋白的降解早于11S 的大豆球蛋白;(2)萌发过程中大豆种子贮藏蛋白的性质发生了变化,在萌发初期以大分子蛋白为主,随着萌发天数的增加,以小分子蛋白为主;(3)7S 付大
