摘 要 ：对火柿和水柿成熟过程中呼吸速率、果肉硬度、果胶物质含量和细胞膜透性变化的研究结果表明：两品种采后呼吸变化动态具呼吸跃变果实的显著特征，均应属跃变型果帝；随着果帝的软化；柿果原胶含量逐渐减少，可溶性果胶不断增加；细胞透性与柿果的硬度呈明显负相关，水柿硬度下降及细胞膜透性增大速率均比火柿快。
