Influence of Bile Stress on the Glucose Metabolism and Bacteriocin Synthesis
of Lactobacillus plantarum KLDS1.0391

Abstract The objective of this work was to study whether bile stress significantly affects on both glucose
metabolism and bacteriocin synthesis in Lactobacillus plantarum KLDS1.0391. This strain was incubated in different con-
centrations of bile salts for certain time, afterward cultivated continually in the MRS for 24 h, then the cell number,
residual sugar, lactic acid production, lactate dehydrogenase (LDH) activity and antibacterial ability were determined.
Results showed that the cell number, residual sugar, lactic acid productions, LDH activity were significantly increased
and antibacterial circle diameter had no significantly changed when Lactobacillus plantarum KLDS1.0391 was incubated
for 0.5 h and 2.0 h in the MRS supplemented with 0.1% and 0.2% bile salt respectively, but all the test results were
significantly lower than control group when the strain was incubated for 2.0 h in the MRS which contains 0.5% bile salt.
It was concluded that the cell number and the ability of glucose metabolism were increased when the KLDS1.0391 was
incubated in the low level of bile salt (≤0.2%) and cultivated for 24 h, but the cell number and the ability of glucose
metabolism bacteriocin synthesis were decreased when the strain was incubated in the high level of bile salt (≥0.4%).

科学家研发健康巧克力 未来或可当药吃
据外媒报道,对于那些爱吃巧克力、又容易对吃巧克力有罪恶感的人来说,这可能是他们
期盼已久的消息:科学家宣称他们研发出一种健康巧克力,未来人们也许可以拿它当药吃。
报道称,巧克力的关键成分可可含有丰富抗氧化物与矿物质,甚至有助降血压与增加有益
于人体的胆固醇,但由于目前大多数巧克力棒都含至少 70%的脂肪与糖,使得巧克力的营养价
值大打折扣。
如今,美国一家公司研发出一款脂肪与糖含量只占 35%的巧克力。这款巧克力靠药草来增
加甜味,人们不用担心会因为吃巧克力而摄入过多的糖。
这款巧克力的研发人员格里高利·哈朗尼恩(Gregory Aharonian)称,他们的长期目标是要
研发出糖与脂肪含量仅占 10%的巧克力。
哈朗尼恩近日在 “世界巧克力论坛”(World Chocolate Forum) 中直指糖为 “下一个尼古
丁”,主张如果能将巧克力中有害健康的成分去除,巧克力应该可以用做医疗用途。
哈朗尼恩表示,他期待与巧克力业者合作,让巧克力成为“世界上最有趣的药物”。
