Abstract:In order to eliminate the interference effects of aldehyde and soluble saccharide in determination of MDA of final products of lipoxygenase isoenzyme, HPLC method was applied to study the differences in MDA contents in rice materials with different lipoxygenase isoenzyme activities under high temperature and high humidity, ambient temperature and humidity conditions. The results showed that the effect of LOX-3、LOX-1,2 to MDA reached its maximum in 4d and 2d separately, and by comparing the highest values and their production times, the contribution speed of LOX-1,2 to MDA was approximately 2 times higher than LOX-3.So it can be concluded that the process of LOX-1, 2 to attack membrane lipid and start membrane lipid peroxidation is higher than that of LOX-3. The study is to provide theoretical basis for the study of rice deterioration.
