摘 要 ：为减少醛类、可溶性糖类物质对水稻LOX同工酶终产物丙二醛(MDA)测定的干扰作用,通过高效液相色谱法,研究了水稻LOX同工酶活性差异材料在高温高湿与常温常湿2种处理下MDA含量的差异.结果表明,LOX-3、LOX-1,2对MDA的贡献分别在第4天和第2天达到最高值.通过比较LOX-3和LOX-1,2的MDA最高值及其产生的时间可知,LOX-1,2对MDA的贡献速度约为LOX-3的2倍.因此,脂肪氧化酶LOX-1,2进攻膜脂、启动膜脂过氧化过程明显快于LOX-3.该研究为探究稻米的陈化机制提供了理论依据.

Abstract:In order to eliminate the interference effects of aldehyde and soluble saccharide in determination of MDA of final products of lipoxygenase isoenzyme, HPLC method was applied to study the differences in MDA contents in rice materials with different lipoxygenase isoenzyme activities under high temperature and high humidity, ambient temperature and humidity conditions. The results showed that the effect of LOX-3、LOX-1,2 to MDA reached its maximum in 4d and 2d separately, and by comparing the highest values and their production times, the contribution speed of LOX-1,2 to MDA was approximately 2 times higher than LOX-3.So it can be concluded that the process of LOX-1, 2 to attack membrane lipid and start membrane lipid peroxidation is higher than that of LOX-3. The study is to provide theoretical basis for the study of rice deterioration.
